Delicious Cleanse Nutrient Rich Vegetable Soup
This is an excellent soup recipe that you can use a variety of vegetables to make. It’s perfectly packed with nutrients and healthy fats, which is ideal nourishment anytime, but especially perfect during a cleanse.
I can’t think of a better way to clean out the refrigerator!
TIP: Roasting the vegetables really brings out their flavor.
Basic Vegetable Soup
3 cups vegetables, roughly chopped
1 medium onion, roughly chopped
4 cloves of garlic, roughly chopped
2 tablespoons olive or coconut oil
Pinch of sea salt
2 1/2 cups of vegetable broth
other seasonings and herbs that you want to add
Preheat the oven to 425 degrees. Spread the vegetables and the onion on a sheet pan and drizzle with the olive oil. Toss and sprinkle lightly with sea salt.
Roast the vegetables for 2-0 minutes until tender and brown on the edges.
When you take them out of the oven, transfer the vegetables, onion and ay oil on the sheet pan into the jar of a blender. Pour the 4 coups of broth into the blender and puree on high until smooth (if you need to do this in batches, that is just fine!).
If you are adding other seasonings, add them to the blender, then season to taste with kosher salt.
Pour the contents into a mason jar to store in the refrigerator or into a pot to reheat over medium-low heat.
