Recipe: Vegan Lentil Tacos

Lentils make a fantastic substitute for the traditional beef that usually goes into tacos. They also pack a nutritional punch!

High in both protein and fiber, lentils are also an excellent source of folate, manganese, and Vitamin B6- all needed to support several of your body’s vital functions such as cell growth, metabolism, red blood cell creation, and brain and other organ functions.

Lentils are a member of the legume family, and come in many varieties - red, brown, black, and green. They are relatively quick and easy to prepare and can be substituted for meats in many recipes.

Here’s one of my favorites!

Vegan Lentil Tacos Recipe

Ingredients:

  • 1 cup dried, brown lentils

  • 1 (8-ounce) can of tomato sauce

  • 1 packet taco seasoning mix (vegan)

  • Corn tortillas

  • Shredded romaine lettuce

  • Cucumber slices

  • Chopped, fresh tomatoes

  • Soy sour cream (optional)

  • Salsa

  • Guacamole

Instructions:

  1. Soak the lentils in a large bowl until soft, about one hour.

  2. Transfer to a saucepan and mix with tomato sauce and taco seasoning.

  3. Add about ¼ cup of water. Simmer on low until heated through.

  4. Heat the tortillas in a frying pan over low heat.

  5. Spoon mixture into tortillas.

  6. Top with things like sour cream, salsa, lettuce, cucumber, and tomato.
